These fish filets are made very fast, ideal for an easy weekday dinner. Full of spices and tomatoes.
- 4 fillets of fish, haddock or hake
- 1 large onion
- 3 or 4 ripe tomatoes
- 4 cloves of garlic
- 3 tablespoons of tomato extract
- 1/4 hot pepper, finely chopped
Pinch of sugar
- 1/2 glass of water
- 1 handful of parsley
- Salt and pepper to taste
- 1 pinch of cumin
1-Preparation: 10mins> Cooking time: 15mins> Ready in: 25mins
2-Chop the onion. Spice with salt and pepper.
3-Heat the oil over medium heat, and add the fish filets, and brown them for 2 minutes on each side.
4-Remove from the pan, leaving them to rest on a plate and in the same oil, sauté the onion and chopped garlic, for a few minutes, until it is transparent.
5-Add the tomatoes, lower the heat and cover the pan.
6-Once the tomatoes were cooked a little, and they were tender, add the tomato extract dissolved in 1/2 glass of water. Add the rest of the condiments and the pinch of sugar.
7-Mix well. Return the fish to the pan and then cook for another 5 minutes more.
For a healthy version, I recommend Alaska pollock that is full of protein, and only use 2 tablespoons of cooking oil.
