- 500 gr. of hen chopped
- 200 gr. of long noodles
- 4 boiled eggs
- 4 potatoes
- 2 carrots
- 1/2 onion
- 1 branch of celery
- 1 piece of ginger
- 2 cloves of garlic
- 8 glasses of water
- 1 scallion
- 5 grains of black pepper
- 3 oil tablespoons
Preparation of Peruvian chicken broth
1-Before starting, peel the onion and garlic and cut them as small as you can. Wash the celery branch and peel it in two, peel the carrots and cut them into julienne.
Peel the piece of ginger, then wash the scallion and cut into small slices. Reserve for the end.
2-Add the oil in the large pot that you will use to cook the broth and, when hot, sauté the onion and garlic for three minutes with a pinch of salt.
3-When the onion is transparent, add the chicken pieces, peppercorns and water very carefully because it jumps. Cover the pot and cook for an hour over medium heat. Remove the foam that forms on the surface occasionally.
4-After the time, add the celery, ginger, whole and peeled potatoes and carrots. Cook for twenty minutes with the pot uncovered and at the end add the noodles and add the salt to your liking. If you need to add more water you can do it.
5-Ten minutes later your Peruvian chicken broth will be ready to serve on each plate with a potato, a boiled egg and the chopped chives to decorate. You can also accompany with a few drops of lemon juice and a little chili sauce. Bon Appetite!
