- 400 gr. of desalted cod
- 1 onion
- 2 cloves of garlic
- ¼ cup fresh parsley
- 3 glasses of milk
- ½ cup of butter
- 1 cup of flour
- ¼ cup of olive oil
- 1/4 teaspoon nutmeg
- 3 eggs
- 1 cup of bread crumbs
- 1 tablespoon black pepper
- Frying oil
Preparation of thermomix cod croquettes
- To start, you must desalinate the cod by soaking it in water for 36 hours. Keep it covered inside the refrigerator and change the water twice a day.
- Once desalted, rinse it, drain it, remove the skin, the thorns and chop. Peel the onion and garlic and cut them into tacos. Wash the parsley and cut it. Reservation.
- Add the onion and garlic in the glass of your thermomix and crush for eight seconds at speed 5. Then remove and reserve in a bowl.
- Place the cod in the glass without washing it and crush it at speed 4 for ten seconds. Add the milk and cook for fifteen minutes, at a temperature of 90 ° C, speed spoon.

- Add the flour and cook for four minutes, speed 1 keeping the last temperature. Then add the nutmeg, salt and pepper and cook for eight minutes at a temperature of 90 ° C, speed 4.
- If your mixture has a creamy consistency it will be ready, it should not be watered down. Pour into a dish, cover with a film and refrigerate until compact.
- Remove the dough from the refrigerator and put your croquettes in your hands, then pass them through the beaten egg, the bread crumbs and fry them in hot oil until golden brown.
- To finish, leave them on paper with kitchen paper so they lose the oil that is left over and enjoy!
