Today at Unareceta.com, we will teach you how to prepare a microwave-based escalivada in a few minutes. Have you ever tried it? This is a plate of roasted vegetables that originated in the rural communities of Spain and is typical of Catalonia, the Valencian Community and the Region of Murcia and Aragon.
You can eat it combined with a toast of homemade oil bread or also as garnish of a tasty hake stuffed with mayonnaise. It’s up to you! It is a very versatile meal that you can drink at any time of the day.
We are ready to start doing this microwave oven practice, so do not stay behind and fix everything to cook.
- 3 garlic cloves
- 2 onions
- 2 eggplants
- 2 red peppers
- 120 ml. Of olive oil
- 1 teaspoon thyme
- Freshly ground black pepper
- Salt to taste
Preparation of the microwave escalivada
1-To prepare this delicious microwave dish, the first thing to do is to wash all the vegetables well and drain them.
2-Once they are well dried, pinch them with a fork on both the top and bottom and rub them with olive oil.
3-Place the peppers in a microwave-safe dish and cook for 10 minutes. When finished, turn them around and program 10 more minutes to be grabbed on the other side. When finished, remove them on a plate and let cool.
4-Next, place the onions and cook for 12 minutes. When finished, remove and reserve. Now it is the turn of the eggplant, place it in the dish, cook it for 4 minutes, then turn it over and cook for 4 more minutes. Remove it too to cool.
5-Once you have cooked all the vegetables, peel them, extract the seeds of the eggplant and the peppers and cut into strips about 2 centimeters wide. Put them in the fountain.
6-Mix in a bowl the two finely chopped garlic cloves, the thyme, the pepper, the salt and the oil. Pour over the vegetables, stir to integrate and your escalivada the microwave will be ready to taste. Eat it cold or at room temperature. Bon Appetite!
