500 gr. of marinated salmon
3/4 cup of sugar
3/4 cup of salt
1 tablespoon of honey
3 branches of chopped fresh dill
Ground black pepper
For the tartar:
1/2 purple onion
1 large tomato
1 ripe avocado
2 tablespoons of English sauce
1 tablespoon of soy sauce
4 tablespoons of olive oil
3 chopped pickled gherkins
Salt to taste
Preparation of marinated salmon tartar
1-You should start defrosting the salmon about 4 hours before preparing the tartar. Then, if you have skin, remove it with a sharp knife. Place the salmon in a dish, sprinkle with black pepper and add the honey.
2-To prepare the marinade, mix the lemon juice, sugar, salt, dill and lemon zest. Cover the salmon with this mixture on both sides, cover with a transparent film and take to the refrigerator for 24 hours. Place a weight on top to put pressure on the fish.
3-After the time, remove the salmon and wash with cold water. Cut it into tacos of approximately 0.5 centimeters and place in a bowl.
4-Next, peel and chop the onion very small. Wash the tomato, remove the seeds, chop the same size as the salmon and add to the bowl.
5-Part the avocado in two, remove the seed and skin, cut into tacos also and unite with the rest of the ingredients.
6-Mix in a bowl soy, olive oil, juice of half a lemon, English sauce, pickles, a pinch of salt and pour over fish and vegetables. Remove carefully.
7-As your tartare of marinated salmon is ready to taste, you can place it immediately or store it in the fridge until it is time to serve it. Bon Appetite!
