-We start by cleaning the mussels and discarding those that are broken, open or have a bad smell.
-When you have selected your mussels, place them in a colander and wash them with plenty of water. Then remove the beards with the help of a scissors and scrape the shell with a knife. Wash again.
-In a pot, add plenty of water, lemon juice, salt to taste and half of the white wine. When the water boils, add the mussels and cook over medium heat for ten minutes or until you feel that they have opened.
-Meanwhile, cut the onion and garlic cloves into very small squares. Fry both ingredients in a casserole with olive oil and when they are golden add the tomato sauce and continue frying over medium heat for ten more minutes.
-Strain the mussels and reserve the broth for cooking. Add the tablespoon of flour to the tomato sauce and stir to integrate. Then, add the rest of the white wine with the broth of mussels and let boil for two minutes to evaporate the alcohol.
