- 3 cups of rice pump
- 250 gr. of cod
- 1 onion
- 1 red pepper
- 4 cloves of garlic
- 2 tomatoes
- 3 artichokes
- 200 ml. of white wine
- 6 cups of fish stock
- 1 lemon
- 2 tablespoons chopped fresh parsley
- 4 tablespoons of olive oil
- Black pepper
Preparation of rice with cod and artichokes
1-Before starting, the first thing you should do is desalinate the fish in case you have not bought it fresh. To do this, place it in a container covered with water in the refrigerator for 48 hours and change the water three times a day.
2-Once your cod is desalinated, drain it, remove the skin, the thorns and cut into small dice. Put it in a pot with boiling water and as soon as the foam comes out, remove it and leave it on a colander to lose the water.
3-Prepare a container with water and lemon juice. Cut the trunk of the artichokes, discard the outer leaves and when you reach the heart, cut into four and submerge in the water with lemon.
4-Next, cut all the vegetables into squares after washing and peeling them. Heat the olive oil in a casserole and add the onion to poach it with a pinch of salt.
5-When it is transparent after three minutes add the garlic, the pepper, the tomato and sauté over medium heat, stirring constantly for ten minutes.
6-Then add the artichokes, mix and add the saffron. Take a couple of turns to integrate, pour the wine and wait two minutes to reduce the alcohol to add the broth and a little pepper.
7-Boil for fifteen minutes and then add the rice along with the pieces of cod. When the rice reaches its point after another fifteen minutes, rectify the salt, remove from the heat and let it stand covered.
8-When you go to serve your rice with cod and artichokes, sprinkle each plate with fresh parsley. Take advantage!
