  • 350 gr. of round rice
  • 1 onion
  • 1 leek
  • 1 red pepper
  • 1 green pepper
  • 1 choricero pepper
  • 2 cloves of garlic
  • 2 carrots
  • 2 tomatoes
  • 1 zucchini
  • 1 eggplant
  • 10 green asparagus
  • One liter and a half of vegetable broth
  • ¼ cup of olive oil
  • Black pepper
  • Salt

Preparation of soupy rice with vegetables

  1. To prepare it, you should start by soaking the choricero pepper in a bowl of water to hydrate it for about ten minutes.
  2. Then, to make the sofrito, chop the onion, the garlic, the peppers and the tomatoes very small.
  3. Wash the carrot, peel it and cut it into cubes. Also rinse the aubergine, zucchini and asparagus and cut them into the same size. Drain the choricero pepper and scrape its flesh with a knife.
  4. Next, heat the olive oil in a pot with high walls and poach the onion for a couple of minutes stirring occasionally. Then add the garlic, peppers and cook for five minutes.
  5. Next, add the tomatoes, the choricero pepper meat and cook for five more minutes.
  6. Once you have your sofrito ready, add the rest of the vegetables, take a couple of turns and add the rice, mix to integrate and sauté for a couple of minutes.
  7. Finally, add the vegetable broth, salt and when it boils, lower the temperature and cook for twenty minutes. Remove at least two times so that the cooking is even and avoid sticking from the bottom.
  8. After the time, remove from the heat your rice with vegetables, cover and let stand for five minutes before enjoying it. We hope you like. Take advantage!
