- 250 gr. of fresh salmon without skin
- 250 gr. of smoked salmon
- 1 small sweet onion
- 20 gr. truffle
- 3 branches of parsley
- 3 tablespoons of extra virgin olive oil
- Watercress or lettuce leaves to decorate (optional)
- Black pepper to taste
- Salt to taste
Preparation of salmon tartar with truffle
1-If the fresh salmon has skin, you should remove it carefully with a sharp knife once you have thawed the fish. Remove the thorns and cut into small pieces. Chop the smoked salmon also and add them to a medium bowl.
2-Next, peel the onion and chop it as small as you can. Do the same with the truffle and add them to the bowl. You can also grate them.
3-Wash the parsley, remove the stems and finely chop. Next, you will season your tartar adding the parsley, the olive oil, a little salt and freshly ground black pepper. Stir well and let marinate for a few minutes.
4-If you are not going to consume it immediately, you should refrigerate it until it is time to eat it.
5-When the time comes to serve you can use a ring to place and decorate with a very thin slices of truffle, a few branches of watercress and a drizzle of olive oil.
