Ingredients    

  • 1 kg. of tuna
  •      1 kg. of tomatoes
  •      1 onion
  •      3 garlic cloves
  •      1 lemon
  •      1 green pepper
  •      1 bay leaf
  •      1 teaspoon cumin grain
  •      1/4 cup olive oil
  •      1 branch of parsley
  •      Salt

Preparation of tuna with tomato in the style of Huelva

1-  The first thing is to blanch the tomatoes. Boil enough water in a pot to cover them and add a little salt. Wash them, remove the stem and cut them crosswise. When the water breaks to boil, incorporate them.

2-Prepare a bowl of water with ice and after two minutes, when you remove the tomatoes with a slotted spoon, throw them into the ice water. Reserve the water to bleed the tuna.

3- Let the tomatoes stand to cool, then drain them, remove the skin and cut into small pieces. Reservation.

4-To make the sofrito, peel the onion and cut it into squares, wash the pepper, clean it and also chop the same size as the onion.

5-Add the olive oil in a large skillet and put the onion to poach. When it is transparent, add the pepper, the laurel and fry for ten minutes.

6- Add the tomato, stir and cook ten more minutes. To make the mashed, crush the peeled garlic cloves, salt and cumin in a mortar to form a paste that you will then add to the sauce.

7-To prepare the tuna, remove the skin and cut it into large pieces. Boil the water you used to scald the tomatoes and when it boils add the lemon juice and then add the tuna to bleed it.

8-Once the water boils again, remove from the heat and drain the fish in a sieve. Then add it to the sauce, cover and cook for ten minutes over medium heat.

9-Serve your tuna with tomato in the style of Huelva immediately and if you like decorate it with a few leaves of parsley. Take advantage!
