  •   1 kg. of tuna steaks
  •  3 large onions
  •     8 tomatoes
  •     1/4 cup olive oil
  •     1 teaspoon of sugar
  •     3 branches of parsley
  •     Black pepper

Preparation of tuna with tomato and onion

1-If you are going to use fresh fish to prepare this dish, the first thing you should do is wash it, drain it, dry it with kitchen paper and season it with salt and pepper. If it is frozen, thaw it in the refrigerator from the previous day.

2-Add two tablespoons of olive oil to a skillet and when it is hot, seal the tuna steaks by sautéing over medium high heat for two minutes per side. Set aside a dish and reserve.

3-Peel the onions, remove the first layer and cut into thin julienne. Wash the tomatoes, turn them over and pass the pulp that you obtained through a sieve, so you will have a finer purée.

4-In the same pan where you selected the tuna you will prepare the sauce. To do this, add two tablespoons of olive oil if necessary. When it is hot put the onions to poach with a little salt to make them faster.

5-Once they begin to change color, add the tomato puree, sugar, a bay leaf, salt and pepper and cook over low heat. Remove frequently and this will prevent it from sticking.

6-When your tomato sauce is ready, after about fifteen minutes, add the tuna steaks and cook for another ten on low heat so that the flavors are well integrated.
