Baked turkey has become a tradition in Guatemalan family gatherings from time to time.

The diversity of ways to prepare it, the various combinations that can be made with other foods and added to the large size that regularly has, are some of the qualities that make it the ideal dish to share quality time with many people, not only for the end of the year parties, but also in any other social gathering.

Here are some easy recipes for preparing turkey in Guatemala:

Ingredients for baked turkey:

  • 1 turkey of about 7 kg.
  • 2 or 3 lemons
  • 2 cups of liquefied onion
  • 1/4 cup of vinegar
  • 3 oil tablespoons
  • 12 cloves of garlic
  • 4 minced chives
  • 2 bay leaves
  • 3 tablespoons of salt
  • 3 tablespoons of English sauce
  • 1 teaspoon ground pepper
  • 2 sprigs of fresh thyme (or 1/4 teaspoon if dry or ground)
  • 1 sprig of parsley
  • 1 cup of dry white wine
  • 3 tablespoons of cognac
  • 2 clean apples
  • 1/2 cup of water
  • 1 spoon of sugar
  • 1/8 teaspoon ground pepper
  • Bacon strips (optional)

1-Wash the turkey with water, remove the neck and rub the whole body with lemon. We reserve the neck aside, because we will use it when baking the turkey.

2-With the help of a blender, grind the onion together with the vinegar, oil and garlic cloves.

3-To make the adobo, we toss the previous mixture in a big container and add the chopped chives, the bay leaf, the salt, the English sauce, the pepper, the thyme, the parsley, the wine and the cognac. We mix very well and we reserve.

4-In the next step, place the turkey in a large baking dish and rub it well with the marinade inside and outside. Then, we put it in the fridge for 3 or 4 hours. During this time, we will make sure to turn it around every once in a while, so that the turkey absorbs all the aromas and flavors well and stays with an unbeatable flavor and juiciness.

5-Once the meat is taken from the weapons of the marinade, we will proceed to prepare the oven, preheating it to 200ºC (390ºF).

6-You can add strips of bacon on the surface of your turkey for decoration.

7-While the oven is heating, put the turkey, marinade and neck in a tray, cover it with aluminum foil and bake for 30 minutes.
